Quick & easy to make Vegan Pancakes. This recipe makes the basic pancakes so you can choose your toppings or add blueberries or vegan choc chips to the mix to put your own spin on things!
300g self raising flour
1 tsp baking powder
1 tbsp caster sugar
1 tbsp vanilla extract
400ml oat milk or almond milk
1 tbsp vegetable oil
1. Whisk flour, baking powder, sugar and vanilla extract, the slowly pour in the milk until you get a smooth thick batter.
2. Heat oil in a pan and add 2 - 4 tbsp of batter in to the pan (depending on the size of the pancke you would like). Cook for 3-4 mins so the edges are set and the mixture is bubbling in the middle. Flip and cook until golden on both sides.
3. Repeat the same process untill all of the batter has gone.
4. Add you chosen toppings to your pancake stack!
