Vegan pancakes

This Vegan Pancake recipe is recommended by our Business Manager Anna, as it is a tasty dish, which is quick and easy to make even if you have a one year old crawling or running around!

Vegan pancakes

Ingredients

  • 200 g mixed frozen berries (in winter) - pick and use fresh berries in summer!
  • 1 tbsp icing sugar
  • squeeze of lemon juice
  • 150 g plain flour
  • 2 tbsp caster sugar
  • 2 tsp baking powder
  • pinch of salt
  • dash of vanilla extract
  • 150 ml almond milk
  • 2 tsp vegetable oil

Method

  1. Tip the flour, caster sugar, baking powder and salt into a bowl, and mix. Pour in the vanilla and almond milk, and whisk.
  2. Heat a frying pan with 2 tsp of oil. Add a heaped tbsp of batter to the pan and cook the pancakes in batches for 3-4 minutes on each side.
  3. In summer add the berries on top; in winter you can make a quick compote out of the mixed berries by tipping them into a small pan with the icing sugar and lemon juice, and cook for 5-10 minutes or until saucy.
  4. Serve the pancakes with the compote or fruit as you wish!
