Sprouts with Pancetta & Chestnuts
or streaky bacon
fresh or vacuum packed
or rapeseed oil
ground black pepper
Trim the base of the sprouts and cut them in half lengthways.
Bring a pan of salted water to the boil. Add the sprouts and cook for only for 2-3 minutes, drain.
Heat the oil in a frying pan and fry the pancetta/bacon until golden and crisp.
Add the sprouts and cook for 2-3 minutes, tossing occasionally.
Roughly chop the chestnuts and add to the pan.
Grate the zest of the lemon over the chestnuts and sprouts
Squeeze a little bit of juice over them.
Add seasoning if necessary.
For vegetarians, do not add the pancetta/bacon - it still tastes delicious!
