Seasonal pizza

Fresh homemade pizza is a fun dish to make with the kids and a great food to get fussy eaters to try new tastes and seasonal produce! This is a fail save recipe that once made can also be frozen by the slice for a quick snack.

Ingredients

For the Pizza Base (makes 2 pizzas):

  • 300 g strong plain lour
  • 200 ml water
  • 1 tsp fast action dried yeast
  • 1 tsp sugar
  • ½ tsp salt
  • 1 tbsp olive oil
  • herbs - dried mixed herbs or freshly chopped basil

For the topping:

  • fresh chopped tomatoes or tomato puree or tomato ketchup!
  • Grated cheddar cheese or mozzarella slices
  • seasonal vegetables or meats - peppers, mushrooms, asparagus, pineapple, sausage, thin sliced ham, chicken.. Whatever you fancy!

Instructions

  • Pizza Base: Mix all the ingredients together in a bowl and kneed until you have a smooth dough (add a little more flour if the dough is too sticky). Cover the bowl with cling film and allow to prove for approx 30 minutes (if you have a bread maker, use the dough setting)
  • Divide the dough into 2 pieces, or 4 pieces if you want smaller pizzas, and pat out into rounds – place on greased baking sheets
  • Topping: Chop up fresh tomatoes or simply spread tomato puree or tomato ketchup over the pizza bases, sprinkle with herbs.
  • Top with cheese and get your children to decorate with whatever toppings they have chosen to eat!
  • Bake in a preheated oven 200’C/Gas mark 6 for 15-20 minutes until golden brown.
