Pumpkin marmalade

Pumpkins are particularly good for making marmalades and jam as they absorb sugar perfectly. This easy to make recipe has a delicious citrus flavour and is a wonderful alternative to orange marmalade on your toast in the morning!

Ingredients

  • 1.5 kg grated pumpkin
  • 2 oranges sliced thinly
  • 3 lemons sliced thinly
  • 1.15 kg sugar
  • ¾ litre water

Instructions

  • Place the grated pumpkin in a large pan with water, orange and lemon. Bring to the boil
  • Simmer for 30 mins until the citrus is softened
  • Add the sugar and stir until dissolved
  • Boil rapidly until setting point has been reached
  • Spoon into clean, warm jars and seal
