Marzipan Cake

Apple, Walnut, Sultana & Marzipan Cake. Inspired by Autumn, this cake is an eye catching centre piece which tastes as good as it looks! A perfect treat to enjoy with a warming pot of tea after a lovely canalside walk!

Ingredients

  • 400 g butter
  • 400 g sugar
  • 4 eggs
  • 400 g self-raising flour
  • 4 apples
  • 100 g oats
  • 50 g walnuts
  • 50 g sultanas
  • 1 tsp mixed spice
  • 300 g marzipan

Instructions

  • Cream together the butter & sugar.
  • Add the eggs one at a time.
  • Peel & grate the apples.
  • Add grated apples, oats, walnuts & mixed spice & mix well.
  • Pour the batter into an 8 inch round greased and lined cake tin.
  • Bake at 160 degrees for approx. 45 minutes.
  • Cool on a wire rack.
  • Once cooled roll out Marzipan and decorate as you see fit. Use food colouring to add colour to your decoration.
