Eton mess
This quick, simple, crowd pleasing dessert is delicious made with our farm shop meringue. A true taste of Summer!
Ingredients
- 4 meringue nests
- 400 ml whipping cream - use double cream, Greek yoghurt or vanilla ice cream as an alternative
- 1 tbsp icing sugar - optional
- 1 large punnet of fresh strawberries (500g) - Why not PYO or swap for use raspberries and blackberries instead?!
- fresh mint to serve - optional
Method
- Whip the cream in a large bowl until nice and thick. Stir in the icing sugar, if used.
- Chop/crush into small chucks the meringues and add to the bowl of cream stirring gently.
- Wash, quarter and hull a large punnet of fresh strawberries.
- Stir together until combined and serve in bowls or glasses topped with a fresh strawberry and a sprig of mint. You could stand slices of strawberries on the inside of the glass for a tempting presentation! (See photo).

Bakewell Tart
This is a real favourite on the tea table. The tart is closely associated with the town of Bakewell located in the neighbouring county of Derbyshire, so we have a lot of local affection for it! To give it a homely taste we use Mrs Povey's jam made from raspberries grown on our farm!
