Chestnut Stuffing


  • 450 g peeled chestnuts very finely chopped
  • 110 g smoked streaky bacon finely chopped
  • 225 g free range pork sausage meat
  • 1 onion finely chopped
  • 25 g butter
  • 4 level tablespoons chopped fresh parsley
  • 1 level dessertspoon fresh thyme finely chopped
  • salt
  • black pepper


  • Melt the butter in a large frying pan and cook the onion and bacon for about 10 minutes, until the onion looks transparent.
  • Tip the contents of the pan into a large mixing bowl & add all the remaining ingredients.
  • Season with salt and pepper and mix very thoroughly.
