Boozy ice-cream

This delicious summer ice cream is easy to make after a visit to our pick your own strawberries! Perfect to serve as a dessert if dining alfresco!


  • 225 g Canalside Farm strawberries - PYO open from May to September. Frozen berries available all year round.
  • 140 g golden caster sugar
  • 200 ml dessert wine - Our ‘Late Harvest’ by Half Penny Green is perfect!
  • 500 ml crème fraiche


  • Scatter two-thirds of the strawberries into a shallow dish. Sprinkle with 50g of the sugar and the wine, then leave the strawberries to marinate while you whisk the crème fraiche.
  • Tip the rest of the sugar and the crème fraiche into a bowl and whisk until thick.
  • Fold the strawberries and wine into the cream. Spoon into a rigid container and freeze for at least 4 hours until scoopable.
  • Serve in chilled bowls scattered with the remaining strawberries.
